Greek Pita Pizzas

This recipe is so simple because it really, for the most part, is just an assembly of food onto pita bread. The most “rigorous” thing about this entire concoction is the homemade Tzatziki sauce. And while you can easily just buy a premade Tzatziki sauce from the store, making this from scratch is so worth it.

I LOVE mediterranean cuisine. It’s always so light and refreshing but so satisfying and I never get sick of it. These Greek pita pizzas are perfect for a quick weekday lunch and I love making these for Cannon too. He is obsessed with the Tzatziki sauce just like his mama! I just cut the pita in strips so he can grip the bread and bite it. The loose toppings obviously fall off but he just eats them separately from the pita bread.

Learn from my mistake: The ONE thing I feel like I needed in this recipe that I forgot to include is a fresh herb. I would use fresh parsley, but you can also use fresh mint. I hate eating mint (I’ll drink it though) so that’s not my first choice.

HERE’S WHAT

Makes 3 pita pizzas

      • 3 pitas
      • rotisserie chicken, shredded
      • 1 large tomato, diced
      • 1 cucumber, seeded and diced
      • feta, crumbled
      • oregano
      • olive oil
      • 1 can chickpeas, drained
      • handful of kalamata olives, halved
      • handful of banana peppers, whole or coarsely chopped
      • fresh parsley, for garnish
      • spread with hummus and/or tzatziki sauce

HERE’S HOW

      1. In a mixing bowl, mix together tomato, cucumber, olives, chickpeas, banana peppers, olive oil, oregano.
      2. Grill or toast the pita.
      3. Set up your pita pizza making station! Set out the bowl of mixed toppings, shredded chicken, hummus or tzatziki and feta cheese.
      4. Build your pita pizza:
          • Take a grilled pita and spread hummus or tzatziki sauce. Layer with shredded chicken and mixed vegetables, then sprinkle with feta cheese. Opa!

For a quick, homemade tzatziki sauce…

      • In a small bowl, mix together plain greek yogurt, english cucumber (diced), lemon juice, olive oil, fresh dill, garlic, salt and pepper.
      • I just eyeball the amounts of each ingredient to my preference. I always like a little more lemon juice and garlic.
      • If you really like a strong lemon flavor, add some zest as well.
